These Easter cakesicles are an adorable addition to your Spring or Easter holiday celebration, brunch, or party!! They include designs for an Easter bunny, carrots, baby chicks, and fun spring colors.

Aren't these springtime Easter Cakesicles so cute!? The kids will love these fun cake popsicles made with your favorite cake, frosting, candy melts, and royal icing.

Ingredients and Tools

Ingredients

Cake: you can use your favorite cake recipe. Make sure it’s baked and cooled. It’s also a great use for scraps from lunchbox cakes or other leftover cupcakes and cake.
Frosting: you can use your favorite frosting, such as vanilla buttercream frosting or chocolate buttercream frosting.
Candy Melts (white, yellow, orange)
Royal Icing or Candy Melts (pink, white, green, yellow, black)
Sprinkles

How to Make

Cakesicles are quite simple to make. Below is a brief overview for Easter themed cakesicles, but I have a full post and in-depth tutorial on making cakesicles, including tips and tricks for perfect cakesicles that don't crack as well as using the dipping method of dipping the full cakesicle in melted chocolate.

Make Cakesicle

Melt the chocolate or candy melts according to instructions. Then, spread the melted chocolate along the molds using a paintbrush, spoon or other utensil.

While the chocolate is still wet, insert the popsicle stick.

While the chocolate dries, you can make the cakesicle mixture by adding a a few tablespoons of frosting to your baked cake and mix together.

Then fill with the cake mixture and cover with more melted chocolate. Once the chocolate has dried, gently remove from the cakesicle mold.

Decorating Easter Cakesicles

Easter Bunny Cakesicles

Since the bunnies has ears that go off the top of the cakesicle, I recommend doing a royal icing (or chocolate) transfer, which is piping royal icing or chocolate in the shape of bunny ears and feet on a piece parchment or food grade acetone paper.

Let them dry, and then, using more royal icing or melted chocolate as a binder, stick the transfers onto the cakesicles as shown:

Once you're done add eyes, nose, mouth, and whisker dots using royal icing or more melted chocolate. It can help to practice on a piece of parchment to get the face how you want it.

For these, I had the bunnies holding little easter eggs, which are Cadbury mini eggs cut in half. Then I used more royal icing to pipe little hands holding the eggs. But, that is optional! They're still really cute without the extra easter egg decoration on the cakesicle.

Carrot Cakesicles

These are so easy to decorate – all you do is take more melted orange chocolate or candy melts and gently drizzle over the cakesicle as shown above.

That's it! You can add more green melted chocolate for an optional green carrot top as well.

Baby Chick Cakesicles

These are so cute! Using either royal icing or more melted chocolate you can pipe yellow wings and a tuff of feathers at the top of the head. Then, using orange pipe little feet and beak.

Using royal icing or very warm chocolate you can use a scribe or toothpick to move around the chocolate to where you want.

Finally, you can add tiny little eyes using black eye sprinkles such as these or more back candy melts or royal icing.

Baby Chick in an Egg

These are also super cute but have an additional step of adding an egg shell. Using royal icing or more melted white chocolate create the outline of a broken shell on a yellow cakesicle.

Then, immediately fill it in with more white chocolate or royal icing.

Let dry, then add little eyes and a beak as you did in the previous baby chick cakesicle.

Spring Decorated Cakesicles

These are so fun and you can your favorite spring, easter, or brightly colored sprinkles.

Just gently drizzle more melted chocolate on the finished cakesicle and while the chocolate is still wet, add your favorite sprinkles. Viola, super easy Easter or spring cakesicles.
