Easter Cakesicles

These Easter cakesicles are an adorable addition to your Easter holiday celebration, brunch, or party!!

Ingredients

  • Cake baked and cooled
  • Frosting
  • Candy Melts white, yellow, orange
  • Royal Icing or Candy Melts pink, white, green, yellow, black
  • Sprinkles
  • Cadbury Mini Eggs optional

Instructions

MAKING CAKESICLES

  • Melt the chocolate or candy melts according to instructions. Then, spread the melted chocolate along the molds using a paintbrush, spoon or other utensil.
  • While the chocolate is still wet, insert the popsicle stick. While the chocolate dries, you can make the cakesicle mixture by adding a a few tablespoons of frosting to your baked cake and mix together.
  • Once the chocolate has dried in the cakesicle mold, fill with the cake mixture and cover with more melted chocolate. Let the chocolate dry and gently remove from the cakesicle mold.

DECORATING CAKESICLES

    Easter Bunny Cakesicles

    • Make a royal icing or chocolate transfer by piping bunny ears and feet on a piece of parchment paper, wax paper, or acetone paper and let dry. This will allow you to attach ears that go off the top of the cakesicle.
    • Once dry, attach the ear and feet transfers to a white cakesicle using more chocolate or royal icing. You can also attach the candy eyes the same way, with a dab or chocolate or icing on the back and gently placing where you want them to go.
    • Using pink chocolate or royal icing, pipe the bunny nose.
    • Using black icing or chocolate pipe a mouth and a few dots on the cheeks for whiskers. Use a toothpick or scribe to move around the wet chocolate on the mouth to exactly where you want it. It can help to practice on a piece of parchment to get the face how you want it.
    • If having the bunny hold an egg, cut a Cadbury mini egg in half and attach to the cakesicle with chocolate. Using melted white chocolate or royal icing, pipe arms holding the eggs in place.
    • Let dry and enjoy.

    Carrot Cakesicles

    • Starting with an orange cakesicle, gently drizzle more melted orange chocolate in lines over the cakesicle.
    • If you want, you can add green melted chocolate for an optional green carrot top as well. Let dry and enjoy.

    Baby Chicks

    • Star with a yellow cakesicle. Using either royal icing or more melted chocolate in a pastry bag with the tip cut off, add a yellow wings and a tuff of feathers at the top of the head.
    • Then, using orange chocolate or royal icing in a pastry bag with a small tip, add little feet and a beak. While still wet, use a scribe or toothpick to move around to exactly where you want it.
    • Finally, you can add tiny little eyes using black sprinkles, more melted black chocolate, or royal icing.

    Baby Chicks in an Egg

    • Use royal icing or more melted white chocolate create the outline of a broken shell on a yellow cakesicle. Then, fill it in with more melted white chocolate or royal icing.
    • Add little eyes and a beak as you did in the previous baby chick cakesicle.

    Spring Cakesicles

    • Using colored melted chocolate in a pastry bag with a small to medium tip, gently drizzle melted chocolate on the cakesicle.
    • While still wet, add your favorite springtime sprinkles. Let dry and enjoy!

    • Use colored chocolate melts in the colors you want or buy candy food coloring, which is oil based and won’t cause your white chocolate melts or white chocolate to separate.
