Choux Pastry (Pâte à Choux)

With only 5 ingredients and 15 minute prep time, choux pastry (pâte à choux) is a simple pastry dough for making cream puffs, eclairs, and profiteroles!



All-Purpose Flour Butter Eggs  Salt Sugar Water

Step 1: Heat Water, Butter, Salt, and Sugar

In a saucepan over high heat, melt the butter, sugar, and salt in the water until it boils.

Step 2: Add and Cook Flour

Add the flour and  cook about 3-4 minutes, until a thick film forms on the bottom on the pan.

Step 3: Cool Dough

Remove from heat and the dough about two minutes to cool down.

Step 4: Add Eggs

While still mixing on low, add 4 eggs one at a time. Make sure to fully incorporate each egg before you add the next.

Step 5: Pipe and Bake Dough

At this point, the dough is done and you can pipe and then bake or fry however you desire.
