Blackberry and Goat Cheese Crostini

Easy and delicious, this goat cheese, blackberry, and mint crostini makes the perfect appetizer all year round!

Ingredients

  • Crostini
  • 8 oz goat cheese log
  • ¼ cup heavy whipping cream
  • 2 pints blackberries split in half
  • ¼ cup sugar
  • Juice from ½ lemon
  • Fresh Mint

Instructions

  • Add half blackberries, sugar, and lemon juice in a heavy bottomed saucepan and cook down for 10 minutes, smashing the blackberries as they cook. Remove from heat and stir in the remaining blackberries.
  • Put goat cheese and cream in standing mixer with whisk attachment 
  • Whip on medium-high for 1-2 minutes
  • Top crostini with goat cheese, blackberry reduction, and mint
