Blackberry and Goat Cheese Crostini

- Crostini
- 8 oz goat cheese log
- ¼ cup heavy whipping cream
- 2 pints blackberries split in half
- ¼ cup sugar
- Juice from ½ lemon
- Fresh Mint
Add half blackberries, sugar, and lemon juice in a heavy bottomed saucepan and cook down for 10 minutes, smashing the blackberries as they cook. Remove from heat and stir in the remaining blackberries.
Put goat cheese and cream in standing mixer with whisk attachment
Whip on medium-high for 1-2 minutes
Top crostini with goat cheese, blackberry reduction, and mint
