ITalian Meringue Buttercream

Italian Meringue Buttercream is a silky smooth frosting using egg whites and hot sugar syrup for a light and stable frosting, perfect for decorating cakes and cupcakes.

Ingredients

Unsalted Butter Egg Whites Water Cream of Tartar Sugar Vanilla Salt

Whip Egg Whites

Whip egg whites and slowly add part of the sugar until stiff peaks form.

Heat Sugar Syrup

Heat sugar syrup without stirring until it reaches 235-240 ℉.

Add Sugar Syrup

Carefully pour the hot sugar syrup down the sides of the egg whites and mix until cool. 

Add Butter

Mix in the butter 1 tablespoon at a time. It should come together to a smooth frosting.

Add Vanilla and Salt

Add vanilla, salt, and remix until combined. 

FROST DESSERT

The frosting is perfect for cakes, cupcakes, brownies and filling sandwich cookies like macarons.
