ERMINE FROSTING

This classic Ermine frosting uses flour and milk roux as a base, which is then whipped with butter until you get a light and delicious frosting.

Ingredients

Flour Unsalted Butter Vanilla Extract Milk Sugar Salt

MAKE THE ROUX

For this step, heat the flour, sugar, salt, and milk together until it starts to thicken into a roux mixture.

COOL ROUX

Once the mixture has thickened,  cover it with plastic wrap, pressing directly onto the mixture.  Then, let cool to room temperature.

WHIP BUTTER AND ROUX

Cream butter, then slowly add in roux mixture. Increase speed and whip until light and fluffy.

ADD FLAVORS AND REMIX

Add in the vanilla and remix.  Once it’s mixed, it’s ready to spread or pipe on your favorite dessert.
